Small landholders pick and pulp their own coffees by hand in this region of Chiapas. They ferment in the backyard with a small tank and wash and dry the coffee wherever they can find space. On weekends they drive bags to the town of Nuevo Paraiso and deliver the coffee to a warehouse where it is classified and blended by cup quality.
