This finca (farm) is owned and operated by a third generation farmer, Erwin Pohlenz.. Erwin farms about 300 hectares that serve as a buffer for Triunfo biosphere reserve. The farm is 50% Pacas (a Salvadorian varietal) and 50% Mundo Novo and sits at an altitude between 1200-1600 meters. They pick only ripe cherries which are then fully washed, patio dried and stored in a cool and stable environment on the farm until shipping.They are working towards Rain Forest Alliance (RFA) and have most of the environment and social practices in place.
Mountain Water Process Decaffeination is a unique, natural process which uses the clear, pure water from glaciers on the highest and most beautiful mountain in Mexico, the Pico de Orizaba or Citlaltepetl. The green coffee beans are immersed in water to extract the caffeine. The water contains soluble components of the coffee beans which holds the flavor, so that during the extraction of the caffeine the beans continue to maintain their original components.To separate the caffeine from the water containing the soluble components, the water passes through a filter which removes the caffeine. This results in coffee solid solubles charged water saturated with the flavor components, but free of caffeine, which is used again in the extraction process.
This process produces coffee beans that are 99.9% caffeine free. Once the decaffeination process is completed, the beans are dried and packed, and ready to export.
